Mozzarella Stuffed Meatballs

INGREDIENTS

  • 1 pound ground beef
  • 1 pound hot Italian sausage
  • 1/2 tsp garlic powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 cup bread crumbs
  • 1/4 cup parmesan cheese
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup chopped parsley
  • low moisture mozzarella cube

INSTRUCTIONS

  1. Cut low moisture mozzarella cheese into 3/4 inch cubes. Store in refrigerator while preparing the meat.
  2. In a large mixing bowl, combine the ground beef, hot Italian sausage, garlic powder, salt, black pepper, bread crumbs, parmesan cheese, eggs, milk, and chopped parsley.
  3. Roll golf ball sized balls with the meat mixture. Squish a mozzarella cube into the center of each meatball and pull the edges of the meatball around it until it forms a new ball.
  4. Arrange the meatballs in a slow cooker and cover them with tomato sauce.
  5. Cook on high for 2 to 2.5 hours.
